What do I need to consider when ventilating commercial kitchens?
The kitchen of a restaurant, café, bar or other catering facility needs good ventilation. When ventilating in commercial kitchens, it is best to choose a fan with a motor outside the air flow that has a drain tray for grease and condensation. A drain pipe can be connected to this tray to collect the grease. This way, dirty, greasy air does not pass by the motor. Choose a commercial kitchen extractor fan or smoke extractor fan.
Ventilation regulations commercial kitchens
The Workplace (Health, Safety and Welfare) Regulations 1992 set legal requirements for employers to provide ventilation in every enclosed workplace. There must be effective (mechanical) extraction in every commercial kitchen. Records should also be kept of when cleaning is done. Besides smoke extractor fans are necessary to comply to the Gas Safety Regulations 1998.
Tips for effective kitchen ventilation:
1. Extractor fan: an extractor fan is indispensable in a commercial kitchen. Take a good capacity and size into account. Contaminated air must be removed quickly and efficiently.
2. Air supply: the extractor fan extracts the dirty air. Air must also be supplied, otherwise a vacuum will be created. This can be done through grilles, windows, doors or with the help of a fan.
3. Public areas: not only in the kitchen but also in the guests' living area there must be sufficient ventilation. This is done with a fan other than the kitchen extractor. Which fan you need for the restaurant depends on its size. If in doubt, contact us for a customized advice without obligation.
Maintenance of commercial kitchen ventilation
Periodic maintenance of HVAC is necessary. If this does not happen, you will soon notice this in the operation of the ventilation system. Good ventilation is necessary to remove CO2 and fine dust from the kitchen, so that sufficient oxygen and fresh, healthy air can enter. Grease can quickly accumulate in a fan, this is bad for your health and can cause a fire more quickly. Insurance companies therefore often require an annual maintenance inspection or cleaning.
- Keep the visible elements of the ventilation system clean. Think of grates, valves and the hood. Keep them free of grease. Read here how to clean grates and valves.
- Have the ventilation system cleaned regularly by a professional. The system is finely tuned and can be damaged, so it is better to have this done. A professional can also clean the ventilation ducts with a special brush.
- Does your fan have a grease drain? The grease that is discharged must be collected or disposed of, otherwise dangerous or unhygienic situations may arise.
This is how you clean commercial ventilation:

Frequently asked questions about commercial kitchen ventilation
For ventilation in the hospitality industry, it is best to choose a fan with a motor outside the airflow that has a drain pan for grease and condensation. A drain pipe can be connected to this tray to catch the grease somewhere. This way, dirty, greasy air does not pass by the motor. In this case, choose a hospitality fan or a flue fan.
A commercial kitchen is equipped with a properly functioning mechanical ventilation system directly connected to the outside air with an air exchange capacity of 3.8-10-3 m3/s per m2 of floor space. Converted, this means an air renewal rate of 5.7 times per hour at a height of 2.40 m.
Adequate ventilation is the most important thing. The kitchen needs a special fan for the hood and for the restaurant area another fan needs to be installed. What kind of fan this should be depends very much on the size of the room. We can help you with the choice of a fan, please contact us if you have any questions.
